What’s to Eat! Sundays 1/19/2020 Some good eats here for tailgating or meals, your choice! Sausage Stuffed Mushrooms to start off, yummy Dill Pickle Soup, and Baked “Fried” Dill Pickles. All delicious! All homemade! Pull up a chair and taste! Remember the highlighted items lead to a page where you can buy the item or something along the lines of the item I think you might like. Traci Kenworth Sausage Stuffed Mushrooms adapted from therecipecritic.com Ingredients: 24 oz. White Button Mushrooms (I used Bella but I would retry with White Button) ½ lb. pork sausage (I used Bob Evans, mild) 2 T. olive Oil Minced garlic 8 oz. cream cheese, softened 1 whole egg yolk 1 c. Parmesan 2 T. parsley (I used dry) Salt & Pepper to taste Pop off the stems of the mushroom and chop finely. Set aside. In skillet, cook sausage till no longer pink. Set aside to cool. In same skillet, add mushroom stems, olive oil, and garlic Sauté until tender. In bowl, add cream cheese and yolk. Stir in Parmesan and parsley. Add cooled sausage and garlic mixture and combine. Stuff each mushroom with spoon. Place in baking dish and bake at 350 degrees F. for 25 mins. Or until brown. Dill Pickle Soup adapted from noblepi
