Recipe Sunday Traci Kenworth Spanish Chicken and Rice in the Crockpot Ingredients: 4 boneless, chicken tenders 3 T. canola oil 1 c. uncooked rice 2 ¼ c. chicken broth Parsley, for garnish Spanish seasoning mix 2 t. paprika 1 t. garlic powder 1 t. salt 1 t. cumin 1 t. chili powder ¼ t. Italian seasoning In small bowl, whisk together all ingredients except for seasoning mix. Divide in half and set aside. Cut lemon in half and slice other half for garnish. Reserve first half for juice. Place chicken in medium bowl. Drizzle with 2 T. oil, then toss to coat well. Use half of seasoning mix. Add remaining oil to skillet and brown chicken on both sides. Remove and add to crockpot. Add rice, chicken broth, juice from lemon, and remaining seasoning mix. Cook on low 4-5 hrs. Garnish with lemon slices and parsley. Serve.
